Company

Today my sister Michelle, her husband Jim, daughter Lyndsey and niece Anne Marie (from Jim's side of the family) are coming to visit! They will be here until Monday and we are so excited to have some company!





In their honor, I'm making these:



In addition to welcome-to-Florida cookies, Mother Nature heard our pleas for warm weather and she's promised 75-80's this week (that's a far cry from 50's last week!).

AND, despite the fact that I have towels to wash, Key Lime Pie to make, oranges to squeeze, bathrooms to scrub, etc. etc., I'm giving you the recipe for these delicious cookies because they are so yummy and easy - my two favorite things in a recipe.

Magic Peanut Butter Cookies

Mix together:

1/2 c. butter (you want this cold or room temperature - not melted at all)

1/2 c. peanut butter (try to get the kind without salmonella)

1/2 c. sugar

1/2 c. brown sugar

1 egg (when doubling this use 1 egg and then only the yolk from the second)

Blend together and then add to butter mixture the following:

1 1/4 c. flour

3/4 t. baking soda

1/2 t. baking powder

1/4 t. salt

Add chocolate chips (you know the saying, the more the merrier). I also used 1/2 a bag of the Reeses baking pieces this time...hope they make it extra yummy! If you scoop them with a cookie scoop, you might want to smash them down a little especially if doubling due to the missing egg white (so you could also call them "thumbprint cookies").

Bake at 375 for 10-12 minutes on ungreased pans (be careful, I over-cooked my last batch because they didn't look done and they were a little too crunchy).

Now, how many hours until that plane lands...

I think I(as a man) would prefer the delicious Puerto Rican dinner that comes around on Fast Sunday or a nice trip to Panera. My wife, however, would vote for the cookies and probably panera.
